It’s refreshing to have a doctor focus in on the impact of diet on health! My experience in the past is that doctors have seemed uneducated and uninterested about the importance of a more plant based and hopefully, organic diet in relation to establishing and maintaining a healthy status. Admittedly, I have strayed from this at times over the years, but with Dr. Carroll’s encouragement, have been much more cognizant of the impact of the typical American diet on our health as a whole. It makes a lot more sense to me to make some simple changes and take responsibility for my own health instead of depending on the medical system to take care of me. Fortunately, I have always taken an interest in a more plant-based diet and seem to have a circle of friends who have sound dietary habits. It helps to have both social and medical supports in this respect. Since going to a more plant-based diet, I have so much more energy and a less foggy feeling. I am beginning to lose weight and have noticed a decrease in aches and pains, increase in attention span and a renewed vitality. I haven’t completely given up animal-based protein, however, but eat a significantly less amount of it.
